drying question

Hi, I've got a bit of conflicting info about drying I was hoping to clear up. I'm drying outdoors in QLD, its averaging 30-35 degrees and high humidity (50-90%ish atm). I've read that if humidity is high, best to dry as fast as possible to mitigate mould, so strip of all leaves, steams etc (as they hold water) and rack for fast dry. Also read that if you dry really fast - its detrimental to the quality, and that its best to leave all leaves and stems on in high heat to try and lengthen drying time so it doesn't dry too fast and ruin the quality. Anyone have any thoughts on this? I'm looking at drying in a shed outside - so its gonna get warm. Cheers.
