my life has changed after switching to spring water

I was fairly stable like 75% of the time I was okay but still had some moderate reactions, mostly facial flushing. I have in the past had anaphylaxis resulting in hospitalization from water. The past few months I have noticed that water feels (moderatly) "spicy" . Obviously you cannot cut out water but I made the switch to Spring Water and it was monumental. My flushing was almost entirely gone and if it was there I did not notice it and it would not hurt or bother me. I can also now tolerate leftovers consumed within 24 hours which is INCREDIBLE progress for someone who is low income like me. I am also able to break my weight barrier and can finally start to lose more weight thank gd.

Now I have a question...

This relates to coffee

I have heard that coffee can contain mold of some sort.

For example, I can tolerate carrots as is but not fermented. and water spring but not purified.

So for coffee, I switched to decaf...with what I had said above, would ditching coffee all together potentially improve my symptoms?

I am currently on my period and that used to be a big MCAS trigger and it has been much less of one with the switch to spring water

Sorry if this post is all over the place
