Are my priorities wrong?

My gf had an autoimmune disease maybe Behçet but they are not sure. We went to my hometown and she got sick with two types of ecoli and Norovirus. I also got sick and went to urgent care for a day.

we both get out the same day, my mother washes all the clothes and bedsheets while we are in the hospital. I wash all the clothes from the hospital the day we come back.

Three days pass and we go back to Europe. It's been 3 days since then and I'm starting to get frustrated.

Her stuff was everywhere since before we left as she just recently moved to my room, I asked her if she could help me unpack before his father arrive and she said yes but now she is too scared and doesn't want me to unpack.

I unpacked my luggage in the bathroom and put in the washing machine all the clothes. Turns out the documents I need for the insurance are in her luggage, I want to open that one but she doesn't allow me and says her health is always a priority and I should respect her boundaries.

I want to organize everything, I can't live in this mess and can't be in bed the whole day, I will need the documents by tomorrow morning since I have to go to work early. Her mother stayed yesterday for 4 hours and her father just arrived. I don't want to be rude either but I can't clean much with them here so I get more frustrated.

Am I being unreasonable?
