Holiday allergy issues + undisclosed building work

We spent £2.5k on a 5* all inclusive package holiday. Large resort, but picked this one because it has an adult only area / rooms / pool / beach and well rated for handling allergies. Booked via a large well known travel company that operates their own planes.

I have an auto-immune disease that means I have a very sensitive allergy. Day 1 evening, I followed all of the allergy advice, all the food had allergen labels, but I had a severe reaction. I went back to the buffet and found the items in question with allergen labels miss-labelled. I raised this with the hotel, they agreed and fixed the labels, but the damage had been done. An immuno reaction makes me exhausted and triggers an on-going stress response, in effect, meaning it’s impossible to relax, this lasted 4 days. I have photos of the incorrect labels. I had a further 4 reactions throughout the stay, despite following their advice. I observed a significant lack of awareness of allergies, including an a-la-carte restaurant initially thinking I had a peanut allergy, but bringing a satay sauce to the table, etc. Towards the end of the week, I was mostly eating fresh salad to avoid reactions.

Half way through the stay, a work crew turned up at the adult only area and started felling a large tree 10m away from where we were sat at the adult only pool. We moved to the other side of the pool, but it’s hard to relax with the sound of a chainsaw. They started a full refurbishment of the area, including using power tools, generators etc. This impacted the whole adult only area. The other pool wasn’t impacted, but with a lot of kids, it was harder to relax and we feel like we didn’t get a significant facility we paid for. I didn’t raise this until checkout, as I didn’t think there was anything they could reasonably do to fix it, in hindsight, probably a mistake. We weren’t notified in advance that this was happening.

At this stage, I have this logged with the rep, just wanted some honest advice on how best to proceed. I don’t feel like I’ve had a holiday, back home still riding out the last allergic reaction, trying to balance if it’s worth the effort to pursue some form of refund or just let it go.
