Valentine's Day gift for girlfriend (need it to be meaningful because I'm proposing later this year)

Looking for Valentine's Day gift ideas for my girlfriend who's in her early 30s. Here's the thing, this Valentine's gift needs to be really special because I'm planning to propose to her later this year. My plan is Valentine's gift, then her birthday in spring, and then I'm proposing when we celebrate our anniversary in September.

I'm torn between getting her something that matches her interests versus something more personal and romantic. Jewellery keeps coming to mind but I'm honestly not sure if that's the right move. Really could use some advice here! Budget isn't a major concern (though I feel like I've exhausted my options even with-got her a Cartier love bracelet last time). I'm willing to spend what it takes to make this special. I can spend over $1k.
