Brand new baby celiac (me) is overwhelmed

Discussion

I got the news yesterday, Ive basically eaten pasta every day for the past 4 years! Of course I got sick, I just thought my body did that. I finally found a doctor who listened and everything makes sense when I researched the diagnosis. I of course have medical questions Im saving for my doctor and my work pays for a dietition (but that meeting is in a few weeks)

I dont know what to eat. I know generally I can eat like meats, fruits/veggies and Ill probably have to learn to enjoy beans, but I feel like I dont even know what my base zero is. What are your go to safe recipes? Favorites and/or lazy meals. I can look up recipes but Ive always had a few hits in exchange for many misses from blogs

Thank you
