don't know which setup is better for my needs

Build Help

hi, I want to build my first ever gaming pc. I don't know whether to go with more expensive and stronger parts or something cheaper (I prefer to save money rather than spend). there are two setups I'm thinking of:

cheaper: amd ryzen 5 6500 + radeon rx 9060 xt 8gb + 32gb ddr4 ram

more expensive: amd ryzen 5 5600xt + radeon rx 9060 xt challenger 16gb + 32gb ddr4 ram

more expensive one can run 2k if I'm not mistaken but honestly i don't know if I really need it, I've always used 1080p so I don't mind fhd. I don't need ultra high graphic settings since I've never played on a better pc than my current laptop so I probably won't even know the difference

also, I don't mind going 16gb ram since it's so expensive nowadays so I am willing to go even cheaper

more demanding games I want to play: rdr2, ghost of tsushima, the witcher, elden ring, baldur's gate 3, MAYBE cyberpunk 2077 and silent hill

my main concern is that i don't know if the more expensive version is not an overkill. this pc is an absolute overkill for some games I want to play (the sims 3 lol). I'm concerned that if I buy the cheaper version I won't be able to upgrade it in the future and will have to buy a completely new pc (I have no idea what I'm talking about btw I know almost nothing about pcs so I don't know if it's even a valid concern)

curently I have a laptop, I don't own a monitor nor keyboard, I have the cheapest mouse that I could find because I only use it when playing or when I don't feel like using the touchpad. that's also why I'm torn because I don't want to spend too much money on the pc, monitor, keyboard and maybe mouse

yes, I know it's the worst time to build a pc but I've had it on my mind for 2 years now and nobody knows when and if ram gets cheaper. I don't mind waiting another 2 or even 4 years for the prices to drop though, gaming is not my prority so if you'd like to tell me I should wait you're free to do so
