What was your coutry's/culture's cuisine like before the Colombian Exchange, and/or what would it be like without it having happened?

I often think about what Italian food would be like without tomatoes, or what Indian and Korean food would be like without hot peppers, or Latin food without citrus, but I am sure I am missing some heavy hitters in both directions, New/Old World. Some spices, herbs, or other ingredients are such staples in cuisines that only 500 years ahk knew nothing about them. Anyone have anything to add?
