Best way to explore nature & hotels/hostels with character, solo 25 F

I'm going to china in April for a few weeks, and am planning to stay in Shanghai, Chengdu, Chongqing, maybe Zhangjiajie, Xi'an, or Guangzhou. Questions:

- How's the best way to see the countryside? I want to go on hikes and see beautiful scenery, but I'm not sure how best to do that if I'm mostly staying in cities. Can I get cars/busses to the trails/parks? Is it best to stay in smaller villages and go out from there?

- I'm also looking for accommodation with character! I'm not a fan of sterile hotel environments. I don't mind a lived-in spot as long as it's clean. Friendly staff and cute neighborhoods are my priority, and I appreciated unique decor and social scenes. Please comment any recs!
