U7 Pro outdoor advantages

Are there any performance advantages to using a U7 Pro outdoor at 2.5 Gbe with PoE+++ and UDM to reach an AC Pro that will be approximately 50 yards away thru light trees in the line of site as opposed to running at 1 Gbe off USW Pro 8 PoE?

Wanting to reach two out buildings where a buried line is not possible. Planned uses include additional AP, cameras, streaming music and tv.

I'm not a networking guy and am open to suggestions, just wondering if it advantageous to use the faster speeds between the APs even though I can't utilize them in each building without upgrades.
