What would you want to see in a 60 minute onigiri making class as a tourist in Tokyo?

Question

A Japanese work friend started an onigiri store and is going to start giving classes by reservation soon as she gets more used to working the store. Her question is if you, as a foreigner, took the class, what would you expect? What would you like to see? What fillings would you expect/like to have on hand during the class? For a 60 minute class, what price would you consider fair? (the current idea is around 5000-10k yen or around 40-80USD depending on what's offered including something like a souvenir apron or happi).
