Creating a portfolio with no experience

Hi everyone! I’m 31F starting over with a BSc in Finance & have plans to get my MBA in IT afterwards. I have experience in the legal field but want nothing to do with that anymore.

I’d like to find resources and information on how one can create a portfolio with no field experience? Nothing I did in my previous roles have anything to do with this venture so i am completely clueless on resources. This is very important to me so I am willing to put in a lot of hours to create my personal portfolio for future employment. I am not opposed to occasionally working for free too. Does anyone have any information on anything like that?

(If it matters I live in the USA currently but moving back to my home country of South Africa when I have completed my studies)
