Looking for a good "open world" rpg/jrpg for switch/switch 2

I want a game similar to monster hunter or rune factory in terms of the map where you can go to different areas but theres usually a central hub where you do everything.
I also want a class system similar to terraria or rune factory where theres just different types of weapons (scythes, hammers, shortswords, dual wielding, staffs, etc.) but no real explicit classes. I also want some things like mining, fishing, cooking, and similar stuff that you can do but isn't the whole focus of the game.
