Should I stay in London, or move to quiet Northern Area for better opportunity?

Hey everyone, I’m in my late 20s and looking for advice on whether to stay in my current situation in London, move to the Stoke on Trent area for a job opportunity (rent contract signing soon beginning of next week with guarantor paid and no wage needing to show), or an alternative that I haven't considered yet. I’ve broken down the details of most of options below for me and my significant other (S/O, also late 20s). I’d really appreciate feedback on which option seems better, any factors I might not have considered, and thoughts on practical or financial aspects like Universal Credit (UC) and renting and what option is the best if I want to save as much money as possible.  Thanks in advance.

Current Situation (London):

I’ve lived in London most of my life, often with dad/stepmom. Currently I’ve been with my mom for the past 5+ years. No rent to pay yet, groceries are covered by her, and no internet or other bills for me or my S/O.

Job situation is tough. I’ve been on and off work for years in a competitive market (I graduated with an Economics degree from a Russell Group uni, also have developed AI and website for past 2-3 years but it hasn’t helped much (also had few livestreaming job when graduated from Uni))

I’ve got interviews lined up currently: one for a Brand Ambassador role (£70/day fixed + commission, but travel costs aren’t covered and might involve outer London), and another for a Sales Development Representative (I’ve been rejected before and may have now exaggerated my experience (desperate times)). I’m also with a government employment service via UC, but they’ve only set me up with one workshop so far.
My S/O struggles too, mostly restaurant gigs at £6-8/hour cash. She’s on a student visa, limited to 20 hours/week if on NI (last NI job was only 10 hours).
If either of us gets a job, we’ll each pay my mom £200/month (which is fair). My S/O also sends £200/month back home (non-negotiable) and pays £550/month for uni (5 months left).

Living environment isn’t the best. My mom can be toxic, bad mouthing us to her sisters and tarnishing our reputation and very gossip oriented (she was a lot more toxic few years back, i had a suicide attempt and was sectioned and then when i finally got out, she was threatening to send me back by saying she will make false claim of me attempting again (and she attempted some by calling behind my back but they did speak with me and her claims got rejected once her story didn't add up) and many other toxic things. But this was few years back, and with my S/O living with me and my mother own health issues worsening, felt like she has mellowed out and the fact that I have been mentally healthy for years and doctors already seen my mom claims not adding up (thus her not being reliable and her claims ignored), mom has stopped with those threats. She will still Gossip about us her sisters and few other questionable thing.

However despite mom toxicity, she has covered my S/O university fees before (and has covered my S/O university fees mostly while she was out of job) (part of it is that's my S/O got in relationship with me through meeting with family friends from my mother side). And mom do have a tendency for flexibility with our rent payment (but £200 isnt a lot so we are not going to be leach and abuse that flexibility).

Option 1: Move to Stoke on Trent Area (Rent Contract Soon):

I’ve been offered a confirmed small restaurant type job at minimum wage, and so has my S/O (though hours are limited at first (especially for her), as it’s a newly opened place). We can choose cash-in-hand or NI payment.
My stepmom/dad arranged a rental place near the area through a family friend. I don’t need to show proof of income for the first 3 months, and the guarantor is covered by my stepmom/dad (its a family friend place i think). I can sign the contract beginning of this coming week but told to sign quickly as space can run out.
I’ve heard UC can cover most of the rent, and with minimum wage work, I would guess I will manage to have some savings (haven’t fully calculated yet). My S/O agreed to cover half of bills or costs not paid by UC once she’s working, and i do trust her but I’m unsure how much she can contribute after her £550 uni and £200 sending back to home. Also I’m under the impression UC covers nearly all the rent if the wage isn't that much.

Theres also a benefit that If I ever move back with mum or dad/stepmom, I could sublet this place for profit (with landlord permission of course, though not sure how common this is).
