A cookies disaster turned out to be a one good chewy brownie.
hi guys, yesterday in my city everything closer earlier than I have anticipated but I was craving cookies so bad and I always bake soooo I got up to do JUST THAT. The recipe started terribly tho, since I didn't have butter nor margarine (ikr...). I am pretty sure anyone here would have told me to drop it and bake another day buuuut um, I decided to look up "no butter cookies", "cookies made with oil" until I stumbled upon this recipe anyway, everything was going alright until i reach for the flour and I notice I don't have enough (bc someone decided to make bread in the house): AND this is where the disaster joruney unfolded, I decided to add 2 tbs of corn startch and 3-4 tbs of cocoa powder, along with chopped chocolates. The batter did thicken, not enough to be cookies and I still had hope that after they get refrigirated for 1h they'll hold together.
So, at the end, after chilling the dough for 1h and trying to scoop the dough and not feeling most confident about it - i took out the brownies tray and called it a day.
IT WAS SUPER GOOD. Had the crust and a satisfying amount of chocolate, also it was chewy it was sort of giving "mochi" from the softness. It was eaten immediately by my whole family with 0 suspicions. And trust me, I always make brownies correctly so they're aware how it's supposed to taste but it was a successssssss.
once again, RECIPE LINK with adjustments: 2 tbs corn startch, 4 tbs cocoa powder.
