Tojiro DP3 vs Hatsukokoro Hikari, which Santoku to pick?

Hello everyone,

Thanks again for all the advice on my last post, it really helped narrow things down! Right now I’m deciding between two knives:

  • Tojiro DP3 Santoku
  • Hatsukokoro Santoku Hikari SLD

I’ve seen great reviews for the Tojiro DP3, but I really like the design of the Hatsukokoro Hikari (especially the handle shape and the clad line contrast that develops over time).

Here’s where I’m a bit confused:

I’m looking at two sites:

The Tojiro DP3 Santoku is only available on Meesterslijpers, but the Hatsukokoro Santoku Hikari SLD is available on both sites, and the prices are different.

I’m guessing this might be because of differences in the handle material, but I’m not sure.

Can anyone explain why the prices might differ between these two listings?
Also, is a Mono Bubinga handle good compared to Ebony or Olive wood handles? Any pros/cons between handle woods would be really helpful!

Thanks in advance!
