Datejust 31 w/Salmon dial?

Wife was just offered a new SS Datejust 31 jubilee fluted with salmon (not pink) roman numerals dial. Gorgeous watch and she loves it. However, we have never seen (or heard of) a salmon dial before. Gray market searches show very few of these and the prices are all over the place. Does anyone know anything about these and their value over time? We are looking for something she loves to wear and don’t really consider watches “investments.” That being said, we would hate to buy retail Rolex and take a huge hit on price as soon as we walk out of the door.
