(switch 2) what version do i play on? And how long to learn the craftings without looking up the recepe?

I mean like when i want a diamond sword i just click the sword but i see others craft it by hand, how long will it take to learn that? Im playing Minecraft for maybe 3 days...

Also what version is it on switch? Java or bedrock? I get mixed answers
