How does one get an apprenticeship?

I'm a little lost and looking for advice. I'm from Ontario Canada and have been looking into getting 310G (Motorcycle Technician) certified to change careers. All of the courses I've seen require you to be sponsored by an employer. But nowadays I see little to no people wanting to teach new guys. In trades or other fields. All postings require years of experience and certification. So if there's no open apprenticeships, and you don't have connections, how does one become an apprentice in any field?
