Missing my old comfort foods: Budget-friendly, quick gluten-free meals for a busy student?

Question

Hey everyone I found out about 8 months ago that I have a gluten sensitivity and have been trying to cut it out. Every so often I find out something I have been eating has gluten which feels like a set back.

My biggest struggle is time and budget. I am a busy student and used to rely on quick freezer meals like spring rolls, chicken fingers, frozen pizzas etc.

The gluten free versions are expensive so I’ve been cooking more from scratch. I tried cutting out bread because of cost but caved since sandwiches are a fast and easy meal. I also miss things like burgers, I haven’t found any GF buns I like, and lettuce wraps just aren’t the same.

Overall I’m mostly struggling with losing my fast comfort foods and am looking for advice.

Is this just a reality I have to get used to? Do most people make their own foods or bite the bullet and pay the price? Or do you have any budget-friendly, low-effort GF suggestions?

TLDR: looking for budget friendly low effort fast gluten free meals for students
