Only selective categories show up on iOS app?

I noticed that only a subset of categories show up when I edit the iOS widget to track a specific category. I didn’t notice any obvious differences between the ones that show up vs the ones that don’t.

Any idea how to make the missing categories appear on the widget list to enable tracking?
