Hello there everyone!

So after trying pickled eggs for the first time the other week I instantly become hooked and wanted to try making my own. Given with what I had on hand I used gpt to help me curate a recipe.

These are soy pickled eggs and ohhhh my, they are so good I've already eaten over half a dozen since making them.👀.

I adjusted the recipe because I originally placed them on a half gallon jar(12eggs) but they weren't completely submerged so I transferred them to a 32oz jar but I had to discard some of the brine. Below is the recipe for 32oz.

¾ cup soy sauce

¾ cup white vinegar

¾ cup water

1½ tablespoons sugar

½ yellow onion, sliced thin

2 teaspoons minced garlic

½ teaspoon whole peppercorns (about 6–8)

¼ teaspoon chili powder (or a touch more if you want a kick)

(Boil the eggs:)

Place eggs in a pot, cover with water, and bring to a boil.

Once boiling, remove from heat and let sit for 10–12 minutes.

Drain, cool under cold water, and peel.

(Make the brine:)

In a small saucepan, combine soy sauce, vinegar, water, sugar, garlic, onion, peppercorns, and chili powder.

Bring to a gentle simmer for about 5 minutes, stirring to dissolve the sugar.

Remove from heat and let the liquid cool completely (this prevents the eggs from toughening).

(Pickle the eggs:)

Place the peeled eggs in a clean glass jar or container.

Pour the cooled brine over them until fully covered.

Seal tightly and refrigerate for at least 3 days before eating (they get even better after 5–7 days).

I hope whoever makes these enjoys them because I sure do! Have a great day.

Results from my first time pickling eggs.
