Paralegal programs - post grad

Not sure if this is the right place to post this, but I am in dire need of guidance and help.

A few questions. I am a senior at a T-20 undergrad majoring in econ and public policy. I was thinking I wanted to go KJD until December, then had a change of heart and decided to take a gap year. Because of that, I missed many of the bigger post-grad paralegal two-year program application dates.

I have applied to 51 paralegal roles to date, had 15 coffee chats that led to referrals, and many of those firms are smaller boutique-level (although have had solid referrals into the big law programs from referrals from people i actually personally know). I have congressional intern experience, experience at two law firms, startup experience, and solid pre-law extracurriculars. I am starting to go crazy. I know this job cycle is a numbers game, but I am genuinely getting terrified. It is February of my last senior semester and I desperately need a job before I graduate. Is there something I'm missing? Any advice helps.

Does anyone know of any 1–2 year paralegal pre-law school programs anywhere in Seattle or NYC that are still open/ will drop soon? I am starting to think I have missed all of them. I refresh Handshake and LinkedIn every day and apply when a new one pops up, but they are few and far between. Can someone please help? Why am I not getting a single interview? I know it is a competitive market, but I need some guidance.

Thank you in advance.
Signed, a terrified undergrad.
