Easiest engine to build for a beginner?

I got the bright idea to instead of buying shitbox after shitbox maybe i could build my own engine and drop it in anything i want. I prefer chevys over anything since ive had a few but im open to suggestions and advice for any platforms. Ill appreciate any tips on what to look for when buying junkyard components as well since i dont want to drop 10k on a first build. Thanks!
