Need help with my pet quails behaviour and her color

My pet quail is so brown I mostly like keeping her in soil since she loves it but I have noticed that shes a bit too dirty her other fellow quails aren't ! And every few months my quail also gets angry at me at make weird noises,flies and bites me it started happening when she first saw a new slipper of mine and she got very angry with it for some reason ?? Any advice ??
