15 day itinerary in Rome/Tuscany/?/Milan

So near the end of May we will be flying into rome and leaving from milan after 15 days. We have to end our trip in Milan as we have are going to see a show at La Scalla. We loved Provence in France so we believe Tuscany will have a similar vibe (villages, tastings, classes, villas) however I don't want to overstay my welcome there if that makes sense. I am not sure what other part of Italy would be optimal for us before visit before going to Milan. Should we do a few days in Cinque Terra, Como, or somewhere else? We don't really like places that are too overly touristy. We enjoy places with boutique local shops vs gaudy be label fashion brands etc. Love a quaint village with outdoor cafes thats not a big city.
