Need to replace cracked composite sink in kitchen

Looking for advice. We have an under mounted composite sink in our kitchen that cracked. We are replacing it with a stainless steel under mount. Our plumbing co. told us we would need a granite company to come uninstall the old sink and mount the new one before they’d come do the plumbing for us. But a dozen or so granite companies have given us the run around or quoted us $400+ just for removal. I looked at the set up and watched a few youtube videos and I’m wondering if this something I could just do myself?

Would love any insight or advice.
