Ubiquiti with FiOS TV

Looking to replace some older Linksys mesh WiFi devices which are unstable, with Ubiquiti. I currently run a FiOS 1Gb connection that’s terminated with RJ45 from the ONT.

Previously I was using TiVos and was not using any Verizon equipment. Now that cable cards are going away I’ve had to move to the Verizon FiOS TV box (small gray streaming box) and DVR. The new devices would not activate without the Verizon router, so currently the ONT runs to the Verizon router and I’ve just connected the primary Linksys node to the router, the other two nodes are doing wireless back haul.

I’d like to move to a Ubiquiti setup but I’m unsure what the best way to do this is. I was looking at a UCG Fiber. Without being able to run wires for APs, is there a recommended setup?
