B550 Aorus Elite V2 CPU_Fan Temperatures

I'm at my wits end, and I'm hoping that there's an easy solution that I've missed. No matter what I do, the CPU_Fan temperature will always climb until it hits roughly 110 degrees and then crashes. Normally, this isn't an issue, as it'll boot into Windows and FanControl will take over, rapidly plummeting the high temperature reading and slowing the fans down accordingly. This has been okay with me, obviously not great as it points to an issue, but ok for many years.

Now I'm trying to reinstall my OS, and I can't make it through the installation! Without FanControl, the fans get pegged at max, temps climb, and eventually it crashes. Is there any hope for me? Why does the temperature appear to be incorrectly reported before Fancontrol kicks in? Is in even incorrect, how can I tell? Any help is appreciated!
