Why do they fly old aircraft across water?

It seems like all of my flights that have been over oceans to destinations like Cancun, Costa Rica, etc, have all been on older 737-700's. Is this done for maintenance issues like parts availability and engineering or are the 800/900 not rated for water crossings?
