What the heck to do with pork chops?

I'll start off by saying I've been sous viding pork chops for years now with really great results. My problem is they always taste the same, pork chop with chutney, pork chop with roasted cabbage, pan sauce, etc. I've even subbed them out in stir fries. No matter what I do, they pretty much taste the same.
