Driving modes on 8.5 GTE

I'm thinking of getting a GTE

How do you change driving modes while you are driving? Is it via the touchscreen?

I know it starts in E mode, but what about when you need some extra acceleration..do you simply kick down and it goes to hybrid, or do you have to select it from the screen at that point 

Or do you put the gear selector to S
