PREP TIME: 25 minutes COOK TIME: 35 minutes SERVINGS: 4 DIFFICULTY: Medium

INGREDIENTS:

  • For the Chicken Marinade:
    • 1.5 lbs (about 680g) boneless, skinless chicken thighs, cut into 1.5-inch pieces
    • 1/2 cup plain Greek yogurt
    • 1 tablespoon ginger-garlic paste
    • 1 teaspoon red chili powder (or to taste)
    • 1/2 teaspoon turmeric powder
    • 1/2 teaspoon salt
  • For the Curry:
    • 2 tablespoons ghee or vegetable oil
    • 1 teaspoon whole fennel seeds
    • 1 large onion (about 200g), finely chopped
    • 1 tablespoon ginger-garlic paste
    • 2 green chilies, slit lengthwise (adjust to taste)
    • 1 small fennel bulb (about 150g), trimmed and finely diced
    • 1/2 cup dried figs, stems removed, quartered, and rehydrated in warm water for 15 minutes
    • 1 teaspoon ground coriander
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon red chili powder (or to taste)
    • 1/4 teaspoon turmeric powder
    • 1/2 cup tomato purée
    • 1 cup warm water or chicken broth
    • 1 teaspoon garam masala
    • 1/2 teaspoon salt (or to taste)
    • Fresh coriander leaves, chopped, for garnish

INSTRUCTIONS:

  1. Marinate the Chicken: In a large bowl, combine chicken pieces with Greek yogurt, 1 tablespoon ginger-garlic paste, 1 teaspoon red chili powder, 1/2 teaspoon turmeric powder, and 1/2 teaspoon salt. Mix well, cover, and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Prepare Figs & Fennel: While chicken marinates, rehydrate the dried figs in warm water for 15 minutes. Drain and chop into smaller pieces if desired. Trim and finely dice the fennel bulb.
  3. Sauté Aromatics: Heat ghee or oil in a large heavy-bottomed pan or Dutch oven over medium heat. Add whole fennel seeds and let them sizzle for 30 seconds until fragrant. Add the finely chopped onion and sauté for 8-10 minutes until deeply golden brown, stirring frequently.
  4. Build the Base: Add the remaining 1 tablespoon ginger-garlic paste and green chilies. Sauté for 1 minute until fragrant. Stir in the diced fennel bulb and cook for 3-4 minutes until it starts to soften slightly.
  5. Add Spices & Figs: Reduce heat to low. Add ground coriander, ground cumin, 1/2 teaspoon red chili powder, and 1/4 teaspoon turmeric powder. Sauté for 1 minute, stirring constantly to prevent burning. Immediately stir in the rehydrated figs and tomato purée. Cook for 5 minutes, stirring occasionally, until the oil separates from the mixture.
  6. Cook Chicken: Increase heat to medium. Add the marinated chicken to the pan. Cook for 5-7 minutes, stirring occasionally, until the chicken is seared on all sides and slightly browned.
  7. Simmer: Pour in 1 cup warm water or chicken broth and 1/2 teaspoon salt. Bring the curry to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until the chicken is tender and cooked through, stirring occasionally.
  8. Finish & Serve: Stir in garam masala. Taste and adjust salt or chili if needed. Garnish generously with fresh chopped coriander leaves. Serve hot with basmati rice, naan, or roti.

TIPS:

  • For a deeper flavor, marinate the chicken overnight in the refrigerator.
  • Don't rush browning the onions; this step is crucial for the curry's depth of flavor and rich color.
  • If you prefer a thicker gravy, cook uncovered for the last 5-10 minutes of simmering, stirring gently, to reduce the liquid.
  • To intensify the fig flavor, you can lightly toast the dried figs in a dry pan for a few minutes before rehydrating them.
