What is generally the best weapon pick for fighters?

As the title asks. To clarify, I'm not asking about specific weapons, but which is best between S&B, 2H, or TWF, taking into account their exclusive feats (GWM, Dual Wielder, Shield Master, etc). As for what I mean by "best", I mean what is literally the most mechanically optimal path to choose. What's generally more superior, S&B's high AC, 2H's consistently high damage, or TWF's increased number of attacks and weapon masteries? Also, do certain fighter subclasses benefit more from certain builds than others?
