Best vegetarian option at specialty restaurants?

Hi all! I am trying to decide where to use my specialty dining credit on the Encore. I am vegetarian.

I see vegetatian options at Le Bistro, Teppanyaki, and Onda by Scarpetta. I could only find pictures of the meals at the first two on Instagram.

Anyone have experience with the vegetarian dishes at these restaurants? Which is best?
