Where should I go for grad trip with mom?

I have trips to Japan, Australia and Alaska planned with friends. I want to go on a trip with my mom as well. No strict budget. I’m based in Singapore. Trip will be in May/June/July. Below are some options I’m considering.

1. Iceland, will probably road trip around and add Scotland and England.

2. Hawaii, I really want to do skydiving but we are not extremely outdoorsy and my mum isn’t that young so too many hikes might be tiring for her.

3. Galapagos, seems a little impractical to me as it’s really far. Would add in Patagonia if we go. Not sure if it will be too adventurous for my mom.

4. Basic Europe trip, go to the usual cities as my mum has never been to Europe in the summer.

5. Bora Bora and Moorea, I want to swim with humpback whales but depends on when exactly I go.

6. Morocco or Jordan. But summer is probably not a good time to go?

I really love nature and would be happy just taking in the views. Anywhere I should consider as well?
