Could someone please give me more information about Creoles in Acadiana?

I know the region is known for its Cajuns but does anyone know where I can find more information about the rural Creole community?

I heard Avoyelles is mostly a Creole parish despite the Cajun moniker. And by Creole I mean white and Creole of color.
