New to meatless eating and want to start meal prepping. Need beginner friendly ideas

Vegan

I recently decided to cut out meat. About three weeks in and so far so good. But I'm realizing I eat a lot of the same things over and over because I don't know what else to make. Now I want to start meal prepping to save time and money and actually have stuff ready during the week. Problem is every time I look up meatless meal prep ideas online it's either super complicated recipes with ingredients I've never heard of or just salads. I can only eat so many salads. I'm not a great cook. I can follow a recipe but I need it to be straightforward. Nothing that takes hours or needs fancy equipment. Just simple food that tastes decent and keeps me full.

Also worried about protein. Everyone keeps asking where I get my protein and honestly I don't have a good answer yet. For the meatless preppers out there, what were your go to meals when you first started? Anything easy that actually holds up through the week?
