Fun ways to play when there's a big skill gap? (Age of the ring mod, mostly)

My girlfriend and I like to play together from time to time and it's been a lot of fun. she says she likes it a lot and has taken the initiative for us to play several times. With that said there's a big gap between our levels, where she struggles to beat the easiest AI, and I'll reliably beat the hardest.

So far we've mostly just played together against either one or two AIs, but it usually ends up with me carrying most of the game and she will help a little as best as she can. She's not used to intense games and struggles a little still with understanding the main mechanics of bfme.

I reckon we'll do some games where I'll coach her as she plays an AI, so tips on coaching entirely new players is also welcome.

The main question however is this: do you guys have any other ideas for ways we could play together? modes or maps where experienced and new players both can have fun, and hopefully where she can develop as a player? or just interesting matchups or handicaps?
