Last Minute Elopement Help / Ideas?

My future wife has had a lot going on lately, and hasn't really nailed down what she wants to do for a wedding. It's neither of our first time to be married, and she doesnt want to make a big deal of it. Shes back and forth between a small backyard wedding and running off somewhere (with a reception/party later on)

Thinking her dad would want to be there (very close) she was leaning wedding. They spoke and he said "you guys should just run off together, get married, and annouce it"

I know she'll be absolutely ok with anything, and she'd be happy with any decision I make. We trust each other, and would have no business getting married if we didnt.

We have a family vacation to Pensacola in a few weeks thats been planned for a few months. Air BNB rented for a week. We have some entertainment options, but nothing set in stone. No itenary, just open and winging it for a week.

I'm going to ask her tonight if she wants to get married on our vacation, and if she does I'll get her permission to plan something out to make it happen. I'm pretty good with surprises, and she loves it.

So, reddit, what have you got? Any last minute, easy, and cheap suggestions? Anyone want to play a role, or make some money? I'll confirm tonight if she wants to go this route, but I feel like theres a pretty good chance of it happening! I do not want to do anything at a courthouse.
