Nashville for a Restaurant tasting trip

I’m bring my 70yo mother to Nashville at the beginning of April and hoping to get a reservation for Catbird. Beside that what are some good restaurants that we should try. We are doing 3 days like W-F (maybe Sat).

I had a short list but my computer restarted before I saved…

She is pretty open to anything but is more focused on taste than the fancy aspects of restaurants.
