Intake Manifold Gaskets worth doing?

I have a 2000 suburban 2500 6.0L and it has 10 codes for lean, knock sensors, and lately a random misfire. I live in phx az and lately it has been ~50F in the mornings and when I start the car it stalls sometimes and idles very rough until the engine has been warmed up for a while. This issue does not happen in summer at all. I am thinking about redoing the intake manifold gaskets and I feel pretty comfortable doing it myself. I am also going to do the knock sensors and throttle body gasket. Is there anything I should know before doing it? For those who have done it, did anything break for you or go really wrong? Any advice would be much appreciated.
