Dining Room Only Herringbone

Remodeling whole house and installing about 4000 sq ft of white oak 5 inch hardwood everywhere but planning to create a plain border around the dining room with a center section of herringbone. We prefer a 3 inch wide plank for the herringbone but what length would be ideal?
