Why do my figs look amazing… but taste kinda bland?

:illuminati: Question

So my Brown Turkey is on its third year and finally giving a decent crop. They look perfect - soft, slightly droopy neck, good color, even a tiny crack on top. But when I cut them open… they’re just sweet. Not rich, not berry-like, just sweet. I water pretty regularly because it’s been hot here. Could that be the reason? I’ve heard stressing the tree a bit makes the flavor better, but I’m scared to mess it up mid-season

Anyone else deal with this? Do you adjust watering close to ripening or just let nature do its thing?
