young, sub-adult or adult?

I'm following up on my post from yesterday. What do you recommend for a beginner with a previous history? A more lively young fish to grow with, a sub-adult for an intermediate level, or an adult so they can see a more defined character but with a history?

Is there a difference between the various species? Are some particularly different when young?
