Newbie 5”2 bikepacker-which bike? help!

hi all! would really appreciate advice from seasoned bikepackers.

im new to this- we hired bikes to cycle route 1 in Taiwan last November and now hooked! always loved hiking and have an old treck hybrid (bought off eBay from a 13yo!) to get work, but need to upgrade for uk and Europe bike packing. way of the roses being 1st up.

im a 5:2 woman in her 40’s, looking at road, canal towpaths and farm lanes more than total off road to start with. Carrying lightweight gear- tent, bags.
any advice would be greatly appreciate!
