Difference between these three Wusthof poultry shears?

I have a gift card from Wusthof. I don't need any of their standard stuff (chef's knives, etc), but I do a lot of spatchcocking, and some breaking down of bones backbones, whole chickens, etc.

I'm eyeballing their shears, but can't figure out the difference between these three? I'm assuming the $180 pair is nicer because it pulls apart, while the others don't (based on spring style?). Am I missing something? Thanks in advance.

9" pull-apart, stainless with internal spring - $180

10", not sure they pull-apart, with external spring coil - $120
