Where does the fantasy races come from?

Elves are beautiful and live longer, Dwarves live in the mountains mining, Orcs are ugly but sometimes similar to dwarves. "Humans" are basic swordsmen or knights. Not always but where does the concept come from and has someone switched things up that the Elves live in the dungeons and Dwarves are the guys with all the knowledge?
