Lunch plans

I have a friend who is incredibly busy. I question her choices sometimes but try to be supportive when she expresses frustration or stress about all the things she has going on in her life. I like her and value our friendship. We plan things but often she has to plan things months in advance to make sure she has time on her calendar. Sometimes we get lunch because we live about a mile from each other. She reached out to get lunch with a coupon a couple weeks ago but I was the busy one for once. Now I’m trying to reschedule and she’s offering a date nearly two weeks from now, and I feel annoyed? How can she be that busy? I’m free every day for lunch between now and then. I’ve got shit I need to download her on about my life and I don’t want to wait two weeks! How do I respond to her? Do I accept her offer and wait patiently or do I say something like “wow, really? Two weeks?”
