I want to take a gap year

Ive already applied and gotten my responses, I havent chosen my uni yet but I also didnt pick a deferred start date on my application, how do I tell/ask the unis i want to take a gap year? Do I wait until ive accepted an offer to message just those ones, or do I message now? What do I say and who do I talk talk etc? :(
